Ingredients
3 pounds veal brains
1 table spoon salt
2 table spoons vinegar
6-8 whole all-spices
8-10 whole black pepper
3-4 bay leaves
4-6 fresh garlic cloves sliced
1/2 medium size onions sliced
Water
Fresh lemon sliced
Ground black pepper and salt to taste
Olive oil
5-6 table spoons flour
Timing
Preparation time: 50 min
Cooking time: 30 min
Directions
Wash brains and place them into large bowl filled with cold water and soak them for 40 min. Transfer brains from bowl into large pot with cold water. Water must cover brains completely. Bring to boiling point. Add salt, spices, onion, garlic and vinegar and simmer for 30 min on medium heat. Remove brains from the pot. Cool. Sprinkle with salt and ground black pepper. Cover with flour on all sides and sauté in olive oil for 5-6 min. Sprinkle with fresh lemon and serve hot with peas, horseradish and slice of lemon on the side.
