Ingredients
3 ripe tomatoes
3 table spoon olive oil
1table spoon chopped sweet onion
Salt and ground black pepper to taste

Directions
Peel tomatoes. Squeeze out seeds and chop pulp coarsely. Cook in olive oil along with onion until mixture is medium thickness. Add salt and pepper to taste, add parsley. Fill cooked omelet and fold.
